Dog training isn't always a smooth sailing, dogs make mistakes, handlers make mistakes.

What I evaluate and journal during each session is the mood of the puppy, what did we work on, what were the strenghts of the session...

Not every dog should be trained for protection , neither do I think that every dog should be started with the protection training early.
